Cinnamon Spice Ice Cream
Ingredients
2cups of heavy cream
2cups whole milk
½ cup sugar, granulated
½ cup packed brown sugar
4 cloves, whole
6 cinnamon sticks, whole
8 egg yolks, large
1 tsp vanilla
2 allspice berries, whole
Mix ¼ cup each of the sugar, cloves, allspice berries, cream, milk and cinnamon in your
Cuisinart® MultiClad 3-3/4 quart saucepan. Set stove to medium heat and let the mixture boil, stir continuously as
you wait for the sugar to dissolve. Remove it from the stove and cover. Set aside for an hour to cool down. Discard
the cloves, allspice berries and cinnamon sticks by straining the mixture then return it to the saucepan.Using a
whisk, beat the egg yolks in a medium bowl and add the remaining sugar. Whisk the mixture until everything blends
well and the consistency is thick. Let it simmer then add 2 cups of the milk mixture whisking a little bit slower.
Combine this with the whole mixture in the saucepan. Set the stove to medium heat and stir the mixture with a
wooden spoon, wait for it to thicken and becomes custard or when you see a path left at the back of the spoon when
you draw your finger to it.Strain the mixture as you transfer it into a container then cover with a cling wrap. Put
in the refrigerator to chill for at least eight hours. Stir the mixture and put it in your Cuisinart®
Automatic Frozen Yogurt - Ice Cream and Sorbet Maker. Let it churn for 25 to 30 minutes then turn it off. By now,
the ice cream will have a soft and creamy texture. If you want a firmer texture, transfer it in an airtight
container and put inside the freezer for at least two hours.Serve and enjoy the exciting sensation of cinnamon and
